bacon, cooked and crumbled (optional)
chopped bell pepper
finely chopped onion
1 8 oz.
Carton sour cream
pepper to taste
at 400 degrees for 1 hour to 1 ˝ hour. Add onion and bell
pepper to bacon drippings and slowly sauté. Cut shallow
length wise slice from each potato and carefully spoon out.
Blend potatoes, butter and sour cream. Stir in onion and bell
pepper. Stuff back into potato skins. Top with grated cheese
and bake at 350 degrees for 20 to 25 minutes. Can be made
ahead and refrigerated.
