Turkey White Bean with Chilly 

  • 2 large onions, chopped

  • 4 cloves garlic, sliced

  • 1 cup chicken or turkey stock, or more if needed

  • 2 pounds ground turkey

  • 2 bell peppers, red, yellow or orange, chopped

  • cup canned chipotle chilies

  • 1 jalapeno chili, seeded and mined

  • 2 to 3 tablespoons chili powder, or to taste

  • 1 to 2 teaspoon toasted cumin seed

  • 1 teaspoon ground coriander or more to taste

  • 1 (28-ounce) can tomato puree

  • Coarsely ground salt and pepper to taste

  • 3 cups dried navy or pinto beans, cooked

  • Splash of hot sauce 


  • 2 bunches scallions, chopped

  • 1 cup shredded Cheddar Jack cheese

  • 1 cup shredded Jack cheese

  • 2 red onions, chopped

  • 2 cups sour cream

  • 2 red bell peppers julienned

  • 2 bunches cilantro, chopped

  • 4 avocado, sliced 

Cook onions and garlic in stock until translucent. Add turkey, peppers and chili; saute for 5 minutes. Stir in chili powder, cumin, coriander, tomato puree, salt, pepper, beans and hot sauce. Simmer for 20 minutes or until flavors are thoroughly blended. Serve with desired garnishes. 

Yield: 10 to 12 servings.
