Squash Casserole

  • 2 cups squash, fresh, frozen or canned

  • 1 can cream of chicken soup

  • 1 cup sour cream

  • 2 carrots, grated

  • Bell pepper, chopped

  • 1 stack, Ritz crackers, crushed

  • 1 med. Onion, grated

  • stick butter, melted

  • salt and pepper to taste 

Cook squash till tender. Add onion, bell pepper, soup, sour cream, carrots, salt and pepper. Butter casserole dish. Sprinkle layer of crumbs in bottom. Add squash and cover with light layer of crumbs. Pour melted butter over top. Bake at 350 degrees for 30 minutes. Surprising delicious, yet easy!
