Skillet Corn Fritters

  • 1 16oz can whole kernel corn, undrained

  • 1/3 cup evaporated milk

  • 2 eggs, beaten

  • 1 1/2 cups all purpose flour

  • 2 tsp baking powder

  • 3/4 tsp salt

  • 1/8 tsp nutmeg

  • vegetable oil

Drain corn, reserving liquid; set corn aside. Add enough corn liquid to milk to equal 1/2 cup. Combine milk mixture and eggs; mix well. Combine remaining ingredients except oil; gradually add milk mixture, stirring until smooth. Stir in corn. Heat 1/4 inch deep oil in large skillet (to about 350 degrees F.). Drop in corn mixture by heaping teaspoons full; cook only a few at a time, turning once. Fry 3 to 5 minutes or until fritters are golden brown. Drain on paper towels and serve immediately.

 

Yield: 8 to 12 Servings.
