Hot Fudge-Ice Cream Parfait 

  • 6 tablespoons unsalted butter

  • cup water

  • 4 ounces unsweetened chocolate

  • 1 cup sugar

  • 3 tablespoons light corn syrup

  • 1/8 teaspoon salt

  • 2 teaspoons vanilla extract

  • 1 quart ice cream 

In a heavy-bottomed 1-quart saucepan, melt butter in water over medium heat. Bring to a boil, stirring constantly.

Add chocolate, stirring occasionally, until it melts. (Chocolate may lump at first but will become smooth.)
Add sugar, corn syrup and salt; boil 5 minutes. Remove from heat and add vanilla. Serve hot over ice cream scooped into parfait glasses.

Yield: 4 servings.
