Fresh Creamed Corn with Sweet Red Peppers 

  • 3 tablespoons unsalted butter

  • 1 small red onion, finely diced

  • 1 large red bell pepper, finely diced

  • 2 cloves garlic, finely chopped

  • 12 ears fresh corn, kernels only (about 3 cups total) cut corn from cobs with Lee's Corn Cutter

  • Salt and freshly ground pepper

  • 1 cup heavy cream

  • 2 tablespoons finely chopped fresh basil 

Heat the butter in medium saucepan over medium heat. Add the onion, pepper and garlic and cook for 1 minute more. Add the corn, season with salt and pepper, cook for 5 minutes. Add the cream and cook until thickened, 5 to 7 minutes. Stir in the basil, season to taste with salt and pepper and serve.

Yield: 6 to 8 servings.
