Eggs and Asparagus

  • 2 cups raw asparagus broken into 1-inch pieces

  • 3 eggs

  • Juice of lemon

  • Grated peel of lemon 

Steam asparagus pieces until al dente. Set aside.

Beat the eggs well. Spray a skillet with non-stick cooking spray.

Cook eggs over low heat until they start to make lumps. Remove skillet from heat; add asparagus and lemon juice and grated peel. Place skillet over low heat and stir constantly until the eggs are just set, leaving the mixture creamy.

Yield: 1 serving
