Creamy Fruit Parfait 

  • 8 ounces cream cheese, softened

  • 1 cup whipping cream

  • cup confectioners’ sugar

  • 1 to 2 teaspoons lemon juice

  • Grated zest of 1 orange and 1 lemon

  • 2 cups sliced fresh or frozen fruit

  • Whipped cream or chopped nuts (for garnish) 

In an electric mixer, beat cream cheese and whipping cream on high speed until light and fluffy. Reduce speed to low and add sugar, lemon juice and citrus zest.

Layer 1/8 of the cream cheese mixture in each of 4 stemmed glasses. Top each with1/2 cup of fruit and of the remaining cream cheese mixture. Chill in freezer 10 to 15 minutes.

Divide remaining cup fruit among the 4 servings; garnish with whipped cream, chopped nuts or both, as desired.

Yield: 4 servings
