Cloister Corn Bread Muffins 

  • 6 oz butter

  • 4 oz sugar

  • 4 eggs

  • 4 oz Bacon

  • 12 oz Corn, cream style

  • 4 oz cheddar cheese

  • 4 oz Jack cheese

  • 8 oz Flour, pastry

  • 8 oz Yellow corn meal

  • 4 TBSP Baking Powder

  • 1 TSP Salt

  1. Use diced, rendered Bacon. Shred all cheeses.
  2. Cream butter and sugar, add eggs, one at a time. Add remainder of ingredients and mix until well incorporated.
  3. Fill well-greased muffin times half way.
  4. Bake in preheated 350 degree oven for approximately 20 minutes.

Yield: 2 dozen
