sausage and grate the
cheese the night before for a quick morning preparation. For a
lighter version, use egg whites and turkey sausage.

cups frozen shredded hash browns
bulk sausage, browned and crumbled
pepper to taste
slices to taste (optional)
1 ½ cups
(3 ounces) shredded cheddar cheese
to 350 degrees. Grease a square 9-inch glass baking dish.
Layer frozen has browns in bottom of baking dish. Sprinkle
sausage over hash browns. In a medium bowl, whisk together
eggs, milk, salt and pepper. Pour over hash browns and
sausage. Place jalapenos, if using, on top. Bake for 40
minutes or until golden brown. Remove from oven and layer with
cheese. Return to oven for 3 to 5 minutes, or until cheese is
completely melted. Cool and cut into 3-inch squares. Serve
warm with Picante sauce, if desired.
