Ham Omelet

Ingredients

  • 4 eggs, divided

  • 1/2 cup ham, cut in small pieces

  • 1/4 tsp. Salt

  • 1/4 cup grated cheese

  • 2 tbs. Water

  • 1 green onion, chopped fine

  • 1 tbs. Margarine

  • 1/4 tsp. black pepper

 

Preparation

Preheat oven to 325°.  Beat egg whites until frothy.   Add water, salt, & pepper. Beat until stiff & set aside.  Beat egg yolks & fold into whites.  Add onion, ham & grated cheese. Melt margarine in a 10 inch skillet that can be used in oven.  Heat until a drop of water sizzles.   Pour egg mixture into , spread evenly with a spatula. Leave higher at sides.   Reduce heat & cook slowly for 8 minutes (or until puffed & set).  Bake in oven for about 10 minutes( or until a knife inserted in center comes out clean).   Loosen sides with spatula.  Tilt pan & fold omelet in half.
